
Biryani Stuffed Burritos
Indian-Mexican fusion with aromatic rice and tender meat

Prepare the riceIn a medium saucepan, bring 2 cups of water to a boil. Add the basmati rice, 1/2 teaspoon of salt, and a pinch of turmeric for color. Reduce heat to low, cover, and simmer for 15 minutes until water is absorbed and rice is tender. Remove from heat and let it rest, covered, for 5 minutes.

Marinate the chickenIn a bowl, combine chicken pieces with yogurt, half of the ginger and garlic, 1 teaspoon garam masala, 1/2 teaspoon cumin, 1/2 teaspoon coriander, and salt to taste. Mix well and let it marinate for at least 15 minutes while preparing other ingredients.

Cook the biryani fillingHeat ghee or oil in a large skillet over medium heat. Add sliced onions and cook until golden brown, about 5-7 minutes. Add remaining ginger, garlic, and spices, stirring for 30 seconds until fragrant. Add marinated chicken and cook until no longer pink, about 8-10 minutes. Stir in half of the cilantro and mint.

Combine rice and chickenGently fold the cooked rice into the chicken mixture, being careful not to break the rice grains. Taste and adjust seasoning as needed. Remove from heat and let cool slightly for easier handling when filling the burritos.

Warm the tortillasHeat a large, dry skillet over medium heat. Warm each tortilla for about 10-15 seconds per side until soft and pliable. Place on a plate and cover with a clean kitchen towel to keep warm.

Assemble the burritosLay a tortilla flat on a clean work surface. Place about 3/4 cup of the biryani filling in the center, forming a horizontal line. Sprinkle with some of the remaining cilantro and mint. Fold in the sides of the tortilla, then roll from the bottom up, tucking in the edges as you go, to form a tight burrito.

Toast the burritosReturn the skillet to medium heat. Place the assembled burritos seam-side down and toast for 1-2 minutes until golden and crisp. Flip and toast the other side for another 1-2 minutes. This helps seal the burritos and adds a pleasant crunch.

ServeCut the burritos in half diagonally and serve immediately. Optionally, serve with raita (yogurt sauce), tamarind chutney, or your favorite hot sauce for dipping.
