
Korean BBQ Burritos
Fusion burritos with tender marinated beef and kimchi slaw

Prepare the marinadeIn a bowl, mix soy sauce, brown sugar, sesame oil, minced garlic, and grated ginger. Add the thinly sliced beef and toss to coat. Let marinate for at least 15 minutes, or up to 4 hours in the refrigerator for deeper flavor.

Cook the beefHeat a large skillet over high heat. Add the marinated beef in a single layer (cook in batches if necessary) and sear for 2-3 minutes until caramelized. Flip and cook for another 1-2 minutes until beef is just cooked through. Remove from heat and set aside.

Make the gochujang sauceIn a small bowl, whisk together 1/4 cup gochujang with 1 tablespoon water to thin it slightly. This will be your spicy sauce for the burritos. Adjust consistency as needed.

Prepare the kimchi slawIn a medium bowl, combine chopped kimchi, shredded carrots, and half of the sliced green onions. Toss well to create a tangy slaw mixture.

Warm the tortillasHeat the flour tortillas in a dry skillet for about 30 seconds per side, or microwave them covered with a damp paper towel for 20-30 seconds until warm and pliable.

Assemble the burritosLay each tortilla flat and spread a thin layer of gochujang sauce in the center. Add 1/2 cup of cooked rice, followed by a portion of the cooked Korean beef. Top with kimchi slaw mixture, remaining green onions, and a sprinkle of sesame seeds.

Roll the burritosFold in the sides of each tortilla, then roll tightly from the bottom up to form a burrito. If desired, wrap in foil to help hold the shape and make it easier to eat.
