Prepare the chickenSeason chicken breasts with salt, pepper, and garlic powder. Heat olive oil in a skillet over medium-high heat. Cook chicken breasts for 5-6 minutes per side until golden brown and internal temperature reaches 165°F (74°C). Let rest for 5 minutes before slicing.

Cook the baconIn the same skillet or a separate one, cook bacon strips until crispy, about 3-4 minutes. Transfer to paper towels to drain excess grease.

Make the spreadIn a small bowl, combine mayonnaise and Dijon mustard. Mix well to create a smooth, creamy spread.

Toast the breadLightly toast all bread slices until golden brown. Allow to cool slightly before assembling.

Assemble the sandwichSpread the mayonnaise-mustard mixture on one side of each bread slice. On the first slice, layer lettuce, sliced tomato, and sliced chicken breast. Top with the second slice of bread. On top of the second slice, add cheese (if using), avocado slices, and bacon. Cover with the third slice of bread, spread side down.

Cut and serveSecure each sandwich with toothpicks and slice diagonally into triangles or straight across into rectangles. Serve immediately with potato chips, french fries, or a side salad.
