  1. Prepare the dressing
    In a small bowl, whisk together the olive oil, red wine vinegar, dried oregano, salt and pepper until well combined. Set aside.
  2. Prepare the bread
    Using your fingers, scoop out some of the soft bread from the center of each roll to create a hollow for the fillings. Brush the inside of each roll generously with the prepared dressing.
  3. Layer the meats and cheese
    Divide the Genoa salami, mortadella, capicola ham, and provolone cheese evenly among the four sandwiches, folding the meats to create volume. Start with the salami on the bottom, then layer with mortadella, capicola, and finish with provolone.
  4. Add the vegetables
    Top the meats and cheese with shredded lettuce, tomato slices, red onion rings, and pepperoncini peppers. Distribute the vegetables evenly across all sandwiches.
  5. Finish the sandwich
    Drizzle the remaining dressing over the vegetables. Season with additional salt and pepper if desired. Close the sandwiches by placing the top half of the roll over the fillings and press gently to compact.
  6. Wrap and rest
    Wrap each sandwich tightly in parchment paper or wax paper, then in aluminum foil. Let the sandwiches rest for at least 15-30 minutes to allow the flavors to meld and the bread to absorb the dressing.
