
Sausage and Peppers Sandwich

Prepare the sausagesIn a large skillet over medium heat, add 1 tablespoon olive oil. Add the sausages and cook until browned on all sides and cooked through, about 10-12 minutes. Transfer to a plate and let cool slightly before slicing diagonally into 1/2-inch pieces.

Cook the peppers and onionsIn the same skillet, add the remaining tablespoon of olive oil. Add the sliced bell peppers and onions. Cook over medium heat, stirring occasionally, until softened and slightly caramelized, about 8-10 minutes.

Add aromatics and sauceAdd the minced garlic, dried oregano, and red pepper flakes (if using) to the skillet. Cook for 1 minute until fragrant. Pour in the red wine if using, and scrape up any browned bits from the bottom of the pan. Cook until wine is reduced by half, about 2 minutes. Stir in the marinara sauce and bring to a simmer.

Combine and finishReturn the sliced sausages to the skillet with the pepper mixture. Stir to combine and coat everything in the sauce. Season with salt and pepper to taste. Simmer for another 3-5 minutes to allow flavors to meld together.

Toast the rollsPreheat broiler. Place the split rolls on a baking sheet and toast under the broiler for 1-2 minutes until lightly golden, watching carefully to prevent burning.

Assemble the sandwichesDivide the sausage and pepper mixture evenly among the toasted rolls. If using provolone cheese, sprinkle it over the hot filling. Return to broiler for 1 minute if you want to melt the cheese. Serve immediately while hot.
