
Chicken Parmesan Sandwich

Prepare the chickenSet up a breading station with three shallow dishes: one with seasoned flour, one with beaten eggs, and one with breadcrumbs mixed with 1/4 cup of the Parmesan cheese. Dredge each chicken breast in flour, then dip in egg mixture, and finally coat in the breadcrumb mixture, pressing gently to adhere.

Cook the chickenHeat the vegetable oil in a large skillet over medium heat. Cook the breaded chicken for 4-5 minutes per side until golden brown and cooked through (internal temperature of 165°F). Transfer to a paper towel-lined plate to drain excess oil.

Prepare the garlic butterIn a small bowl, combine the softened butter with minced garlic and a pinch of salt. Mix well and set aside.

Toast the rollsSpread the garlic butter on the cut sides of each roll. Place under a broiler for 1-2 minutes until lightly toasted and fragrant. Remove and set aside.

Assemble the sandwichPlace each chicken breast on a baking sheet. Top each with 1/4 cup of marinara sauce, 2 slices of mozzarella cheese, and sprinkle with remaining Parmesan cheese. Broil for 2-3 minutes until the cheese is melted and bubbly.

Finish the sandwichPlace each chicken parmesan cutlet on the bottom half of a toasted roll. Drizzle with additional warm marinara sauce if desired, sprinkle with fresh basil, and close with the top half of the roll.
