    Open the sub rolls and drizzle the inside of each roll with 1 tablespoon of olive oil. This creates a barrier that prevents the bread from getting soggy.
  2. Make the dressing
    In a small bowl, whisk together the remaining 4 tablespoons of olive oil, red wine vinegar, dried oregano, salt, and pepper. Set aside for flavors to blend.
  3. Layer the cheeses and meats
    Layer 2 slices of provolone cheese on the bottom half of each roll. Then evenly distribute the Genoa salami, capicola ham, mortadella, and prosciutto across all four sandwiches, folding the meat slices to create volume and texture.
  4. Add the vegetables
    Top the meats with shredded lettuce, tomato slices, red onion slices, and pepperoncini peppers. Distribute these evenly among all four sandwiches.
  5. Dress the sandwich
    Drizzle the prepared dressing over the vegetables, focusing on the lettuce to ensure it absorbs the flavors. Season with additional salt and pepper if desired.
  6. Press and serve
    Close the sandwiches and press down gently to compress the ingredients slightly. If desired, wrap tightly in parchment paper or aluminum foil and let sit for 15-30 minutes to allow flavors to meld together. Cut each sandwich in half diagonally before serving.
