  1. Prepare the chicken
    Season the pounded chicken breasts with salt and pepper on both sides. Set up a breading station with three shallow dishes: flour in the first, beaten eggs in the second, and a mixture of breadcrumbs and 1/2 cup Parmesan cheese in the third.
  2. Bread the chicken
    Dredge each chicken breast in flour, shaking off excess. Dip into beaten eggs, allowing excess to drip off. Finally, coat completely in breadcrumb mixture, pressing gently to adhere. Place breaded chicken on a plate and refrigerate for 15 minutes to help the coating set.
  3. Cook the chicken
    Heat olive oil in a large skillet over medium-high heat. Cook chicken breasts until golden brown and crispy, about 4-5 minutes per side, or until internal temperature reaches 165°F (74°C). You may need to work in batches to avoid overcrowding the pan. Transfer cooked chicken to a paper towel-lined plate.
  4. Prepare the sauce and cheese
    Preheat broiler to high. Warm marinara sauce in a small saucepan over medium heat. Place cooked chicken breasts on a baking sheet. Spoon about 1/4 cup marinara sauce over each chicken breast, then top each with 2 slices of mozzarella cheese and sprinkle with remaining Parmesan cheese.
  5. Melt the cheese
    Place the baking sheet under the broiler until cheese is melted and bubbly, about 2-3 minutes. Watch carefully to prevent burning. Remove from oven and sprinkle with dried oregano.
  6. Toast the rolls
    While the cheese is melting, lightly toast the hero rolls until just crisp. Spread a thin layer of marinara sauce on the bottom half of each roll.
  7. Assemble the heroes
    Place one chicken cutlet on each roll bottom. Add a spoonful of additional marinara sauce if desired, and sprinkle with torn basil leaves. Close sandwiches with the top half of the rolls, pressing gently.
  8. Serve
    Cut heroes in half diagonally and serve immediately while the chicken is still crispy and the cheese is melted. Accompany with additional marinara sauce on the side for dipping if desired.
