  1. Prepare the bread
    Lightly toast the submarine rolls in a toaster oven or under a broiler until just golden, about 2-3 minutes. Watch carefully to prevent burning.
  2. Make the garlic oil
    In a small bowl, combine the olive oil, minced garlic, dried oregano, salt, and pepper. Mix well and let stand for 5 minutes to infuse the flavors.
  3. Assemble the sandwich
    Brush the inside of each roll with the garlic oil mixture. Layer the bottom half of each roll with sliced mozzarella, followed by tomato slices. Season with a pinch of salt and pepper.
  4. Add the basil
    Arrange fresh basil leaves evenly over the tomatoes. If desired, sprinkle with red pepper flakes for a touch of heat.
  5. Finish the sub
    Drizzle each sandwich with balsamic glaze. Place the top half of the roll over the fillings and press gently to compact the sandwich.
  6. Serve
    Cut each sandwich in half diagonally and serve immediately, or wrap tightly in parchment paper or foil for a picnic or lunch to go.
