Prepare the meat mixtureIn a large bowl, combine the ground lamb, minced onion, minced garlic, oregano, marjoram, cumin, rosemary, salt, and pepper. Mix thoroughly with your hands until all ingredients are well incorporated. Cover and refrigerate for at least 1 hour to allow flavors to meld.

Form the gyro loafPreheat oven to 325°F (165°C). Take the meat mixture and place it onto a baking sheet. Form it into a compact, flat loaf, about 8 inches long, 5 inches wide, and 1.5 inches thick. This shape helps ensure even cooking.

Bake the gyro meatBake the meat loaf in the preheated oven for approximately 60-70 minutes, or until the internal temperature reaches 165°F (74°C). Allow the meat to rest for 10-15 minutes before slicing.

Slice the gyro meatUsing a sharp knife, cut the gyro meat into very thin slices. If you prefer, you can briefly sear the slices in a hot skillet for a crispy texture, though this is optional.

Warm the pita breadWarm the pita bread either in the oven (wrapped in foil for 5 minutes at 300°F/150°C), on a dry skillet over medium heat for 30 seconds per side, or briefly in the microwave for 10-15 seconds.

Assemble the gyrosSpread about 2-3 tablespoons of tzatziki sauce on each warm pita. Layer with several slices of the gyro meat, followed by tomato slices and red onion. Sprinkle with fresh parsley.

Fold and serveFold the pita over the filling or wrap it in parchment paper to hold everything together. Serve immediately while the meat is still warm and the pita is soft.
