  1. Prepare the marinade
    In a large bowl, combine olive oil, lemon juice, minced garlic, oregano, thyme, cumin, paprika, salt, and pepper. Whisk together until well blended.
  2. Marinate the meat
    Add the cubed pork (or chicken) to the marinade and toss to coat evenly. Cover the bowl with plastic wrap and refrigerate for at least 2 hours, preferably overnight for maximum flavor.
  3. Prepare skewers
    If using wooden skewers, soak them in water for 30 minutes to prevent burning. Thread the marinated meat pieces onto skewers, alternating with pieces of red onion and bell pepper.
  4. Preheat grill
    Preheat your grill to medium-high heat (about 400°F/200°C). Oil the grates lightly to prevent sticking.
  5. Grill the souvlaki
    Place the skewers on the hot grill and cook for about 10-15 minutes, turning occasionally until the meat is cooked through and slightly charred on all sides. Pork should reach an internal temperature of 145°F (63°C) and chicken 165°F (74°C).
  6. Rest and serve
    Remove the skewers from the grill and let them rest for 5 minutes. Serve hot with warm pita bread, tzatziki sauce, sliced tomatoes, and onions for an authentic Greek meal.
