Juicy marinated lamb with tzatziki in warm pita bread

Prepare the marinadeIn a large bowl, combine minced garlic, lemon juice, olive oil, Greek yogurt, oregano, cumin, salt, and pepper. Whisk until well combined to create a smooth marinade.

Marinate the lambAdd the thinly sliced lamb to the marinade, ensuring all pieces are well coated. Cover with plastic wrap and refrigerate for at least 2 hours, preferably overnight for maximum flavor.

Cook the lambHeat a large skillet over medium-high heat. Remove the lamb from the marinade, shaking off excess. Cook the lamb in batches, about 3-4 minutes per side until browned and slightly crispy on the edges. Transfer to a plate and cover with foil to keep warm.

Warm the pita breadHeat the pita bread on a dry skillet or in the oven at 350°F (175°C) for about 2 minutes until warm and pliable, but not crispy.

Prepare the vegetablesWhile the lamb is cooking, prepare the vegetables. Thinly slice the red onion, dice the tomatoes, and chop the parsley. Set aside in separate bowls for serving.

Assemble the gyrosSpread a generous tablespoon of tzatziki sauce onto each warm pita bread. Top with several slices of the cooked lamb, sliced red onion, diced tomatoes, and chopped parsley.

Fold and serveFold the pita bread over the filling or wrap it in parchment paper to create a cone shape. Serve immediately while the lamb is still warm and the pita is soft.
