  1. Prepare the vegetables
    Wash and dry all vegetables. Cut tomatoes into wedges or chunks, slice cucumber into half-moons, chop the bell pepper into 1-inch pieces, and thinly slice the red onion into rings.
  2. Assemble the base
    In a large wide bowl, combine the tomatoes, cucumber, bell pepper, and red onion. Toss gently to mix them together evenly.
  3. Add the cheese and olives
    Place the sliced or cubed feta cheese on top of the vegetables. Do not mix it in - traditional Horiatiki salad keeps the feta in large pieces on top. Scatter the Kalamata olives throughout the salad.
  4. Season the salad
    Sprinkle the dried oregano, sea salt, and freshly ground black pepper evenly over the salad, focusing particularly on the feta cheese.
  5. Dress the salad
    Drizzle the extra virgin olive oil, red wine vinegar, and fresh lemon juice over the entire salad just before serving. In authentic Greek style, the dressing ingredients are added separately rather than pre-mixed.
  6. Serve immediately
    For the best flavor and texture, serve the salad immediately at room temperature with crusty bread to soak up the delicious juices that form at the bottom of the bowl.
