  1. Prepare the chicken mixture
    In a large bowl, combine the shredded chicken with cumin, chili powder, garlic powder, cayenne pepper (if using), salt, and black pepper. Mix well to ensure the chicken is evenly coated with spices.
  2. Sauté the vegetables
    Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the sliced bell peppers and onions, and sauté for 5-6 minutes until they begin to soften and slightly caramelize. Season with a pinch of salt and pepper. Remove from skillet and set aside.
  3. Assemble the quesadillas
    Lay out four tortillas on a clean work surface. Distribute the seasoned chicken evenly among them, followed by the sautéed vegetables. Sprinkle each with 1/4 cup of shredded cheese, then top with the remaining four tortillas to create four quesadillas.
  4. Cook the quesadillas
    Heat the remaining tablespoon of olive oil in a large skillet over medium heat. Carefully transfer one quesadilla to the skillet and cook for 2-3 minutes until the bottom is golden brown and crispy. Flip and cook for another 2-3 minutes until the cheese is fully melted and the other side is crispy. Repeat with the remaining quesadillas.
  5. Slice and serve
    Transfer each quesadilla to a cutting board and let rest for 1 minute. Using a sharp knife or pizza cutter, slice each quesadilla into quarters. Arrange on serving plates and garnish with fresh cilantro leaves. Serve immediately with sour cream and fresh salsa or pico de gallo on the side.
