  1. Prepare the marinade
    In a large bowl, whisk together 2 tablespoons olive oil, lime juice, garlic, cumin, chili powder, oregano, salt, and black pepper. Add the sliced steak and toss to coat evenly. Cover and refrigerate for at least 15 minutes or up to 4 hours for more flavor.
  2. Cook the vegetables
    Heat 1 tablespoon olive oil in a large cast-iron skillet or frying pan over medium-high heat. Add the sliced bell peppers and onions, cooking for 7-8 minutes until they begin to soften and char slightly. Remove the vegetables from the pan and set aside.
  3. Cook the beef
    In the same skillet, increase heat to high. Remove the beef from the marinade, letting excess liquid drip off. Add the beef strips to the hot pan in a single layer (you may need to cook in batches to avoid overcrowding). Cook for 2-3 minutes per side until well browned and just cooked through. Return the vegetables to the pan and toss with the beef to combine.
  4. Warm the tortillas
    While the beef is cooking, warm the tortillas either by wrapping them in foil and placing in a 300°F (150°C) oven for 5 minutes, or by heating them individually in a dry pan for 30 seconds per side.
  5. Serve the fajitas
    Serve the sizzling beef and vegetable mixture immediately with warm tortillas and your choice of toppings. Allow everyone to assemble their own fajitas by placing the beef mixture in the center of a tortilla and adding desired toppings before rolling up.
