  1. Prepare the shrimp
    In a large bowl, toss shrimp with 1 tablespoon olive oil, lime juice, cumin, chili powder, paprika, cayenne (if using), salt, and pepper. Let marinate for 10 minutes while preparing other ingredients.
  2. Sauté the vegetables
    Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Add sliced bell peppers and onions, and cook for 5-6 minutes until softened but still slightly crisp. Add minced garlic and cook for another 30 seconds until fragrant. Transfer vegetables to a plate and keep warm.
  3. Cook the shrimp
    In the same skillet, add the remaining tablespoon of olive oil. Add marinated shrimp in a single layer and cook for 2 minutes per side until pink and opaque. Be careful not to overcook the shrimp or they will become rubbery.
  4. Combine and finish
    Return the pepper and onion mixture to the skillet with the shrimp. Toss everything together and cook for an additional minute to combine flavors. Taste and adjust seasoning if needed.
  5. Serve the fajitas
    Warm the flour tortillas according to package instructions. Spoon the shrimp and vegetable mixture onto the center of each tortilla. Top with fresh cilantro, sour cream, guacamole, and a squeeze of fresh lime juice as desired. Fold the tortillas and serve immediately.
