  1. Marinate the steak
    In a bowl, combine olive oil, lime juice, minced garlic, chili powder, cumin, salt, and pepper. Add the sliced steak and toss to coat evenly. Let marinate for at least 15 minutes at room temperature, or up to 4 hours in the refrigerator.
  2. Cook the steak
    Heat a large skillet over medium-high heat. Cook the marinated steak for 3-4 minutes, stirring occasionally, until browned and cooked through. Remove from heat and let rest for 5 minutes before chopping into smaller bite-sized pieces.
  3. Sauté the vegetables
    In the same skillet, add the sliced bell peppers and onions. Cook for 4-5 minutes until slightly softened but still crisp. Remove from heat and set aside.
  4. Assemble the quesadillas
    Place a tortilla on a clean work surface. Sprinkle 1/4 cup of cheese over half of the tortilla. Top with a portion of the cooked steak, sautéed vegetables, and a sprinkle of cilantro. Add another 1/4 cup of cheese on top and fold the tortilla in half to cover the fillings.
  5. Cook the quesadillas
    Heat a large non-stick skillet or griddle over medium heat. Place the assembled quesadilla in the skillet and cook for 2-3 minutes per side until golden brown and crispy, and the cheese is fully melted. Repeat with remaining tortillas and fillings.
  6. Serve
    Cut each quesadilla into triangles using a pizza cutter or sharp knife. Serve hot with sour cream, guacamole, and additional cilantro if desired.
