Prepare the chickenPlace chicken breasts between two sheets of plastic wrap and pound to an even thickness of about ½ inch. In a small bowl, mix olive oil, lemon juice, minced garlic, oregano, paprika, salt, and pepper. Place chicken in a shallow dish and pour marinade over it, turning to coat. Marinate for at least 10 minutes (or up to 2 hours in the refrigerator).

Grill the chickenPreheat grill or grill pan to medium-high heat. Remove chicken from marinade and grill for 5-6 minutes per side, or until internal temperature reaches 165°F (74°C) and juices run clear. Let rest for 5 minutes before slicing or serving.

Prepare the breadWhile the chicken is resting, lightly toast the bread slices or ciabatta rolls until golden brown. In a small bowl, mix mayonnaise and Dijon mustard together to create a spread.

Assemble the sandwichesSpread the mayo-mustard mixture on one side of each bread slice or on both halves of the ciabatta rolls. On the bottom slice, layer lettuce, sliced chicken, tomato slices, red onion slices, and avocado if using.

ServeTop with the remaining bread slice or ciabatta half. Cut in half diagonally if desired and serve immediately. Pair with a side of chips, French fries, or a light salad for a complete meal.
