  1. Season the chicken
    In a small bowl, mix together the smoked paprika, garlic powder, onion powder, salt, and black pepper. Rub this seasoning mixture all over the chicken breasts, ensuring they're evenly coated.
  2. Sear the chicken
    Heat olive oil in a large skillet over medium-high heat. Add the seasoned chicken breasts and sear for 3-4 minutes on each side until golden brown.
  3. Simmer in BBQ sauce
    Reduce heat to medium-low. Add the BBQ sauce, chicken broth, and brown sugar to the skillet, stirring to combine. Cover and let the chicken simmer in the sauce for 15-18 minutes, or until the internal temperature reaches 165°F (74°C).
  4. Shred the chicken
    Remove the chicken from the skillet and place on a cutting board. Using two forks, shred the chicken into bite-sized pieces. Return the shredded chicken to the skillet with the sauce and stir to coat evenly. Let it simmer for 2-3 more minutes to absorb the flavors.
  5. Toast the buns
    While the chicken is simmering in the sauce, lightly toast the hamburger buns either in a toaster, under the broiler for 1-2 minutes, or in a dry skillet over medium heat until golden brown.
  6. Assemble the sandwiches
    Divide the BBQ chicken mixture evenly among the bottom halves of the toasted buns. Top each with a quarter of the coleslaw and a pickle slice. Add an extra drizzle of BBQ sauce if desired, then cover with the top bun halves.
