Smoky, tender pulled chicken with tangy BBQ sauce on a bun
Ingredients
Instructions
-
Season the chickenIn a small bowl, mix together the smoked paprika, garlic powder, onion powder, salt, and black pepper. Rub this seasoning mixture all over the chicken breasts, ensuring they're evenly coated.
-
Sear the chickenHeat olive oil in a large skillet over medium-high heat. Add the seasoned chicken breasts and sear for 3-4 minutes on each side until golden brown.
-
Simmer in BBQ sauceReduce heat to medium-low. Add the BBQ sauce, chicken broth, and brown sugar to the skillet, stirring to combine. Cover and let the chicken simmer in the sauce for 15-18 minutes, or until the internal temperature reaches 165°F (74°C).
-
Shred the chickenRemove the chicken from the skillet and place on a cutting board. Using two forks, shred the chicken into bite-sized pieces. Return the shredded chicken to the skillet with the sauce and stir to coat evenly. Let it simmer for 2-3 more minutes to absorb the flavors.
-
Toast the bunsWhile the chicken is simmering in the sauce, lightly toast the hamburger buns either in a toaster, under the broiler for 1-2 minutes, or in a dry skillet over medium heat until golden brown.
-
Assemble the sandwichesDivide the BBQ chicken mixture evenly among the bottom halves of the toasted buns. Top each with a quarter of the coleslaw and a pickle slice. Add an extra drizzle of BBQ sauce if desired, then cover with the top bun halves.
