Prepare the vegetablesPreheat oven to 425°F (220°C). In a large bowl, toss the sliced zucchini, bell peppers, red onion, and eggplant with olive oil, dried oregano, cumin, salt, and pepper until evenly coated.

Roast the vegetablesSpread the seasoned vegetables in a single layer on two baking sheets. Roast for 20-25 minutes, turning once halfway through, until vegetables are tender and slightly caramelized at the edges.

Toast the breadIf desired, lightly toast the bread slices or ciabatta rolls until just golden for extra crunch and structure. This helps prevent the sandwich from becoming soggy from the vegetables.
