
Buffalo Chicken Cheesesteak
Spicy, cheesy twist on the classic Philly sandwich

Prepare the chickenPlace chicken breast slices in a bowl and season with salt and pepper. Add ¼ cup of buffalo sauce and toss to coat evenly. Let marinate for 5-10 minutes while preparing other ingredients.

Sauté the vegetablesHeat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add sliced onions and bell peppers, cooking until softened and slightly caramelized, about 6-8 minutes. Remove from pan and set aside.

Cook the chickenIn the same skillet, add the remaining tablespoon of olive oil. Add the marinated chicken and cook over medium-high heat until no longer pink and slightly browned, about 6-8 minutes. Add the remaining ¼ cup of buffalo sauce and stir to coat the chicken. Return the cooked vegetables to the pan and toss everything together.

Prepare the garlic butterIn a small bowl, combine the melted butter with minced garlic. Set aside.

Toast the rollsPreheat the broiler. Brush the inside of each roll with the garlic butter mixture. Place rolls on a baking sheet, open-faced, and toast under the broiler until lightly golden, about 1-2 minutes. Watch carefully to prevent burning.

Assemble the sandwichesDivide the chicken and vegetable mixture evenly among the toasted rolls. Top each with provolone cheese and blue cheese crumbles.

Melt the cheeseReturn the assembled sandwiches to the broiler for 1-2 minutes until the cheese is melted and bubbly. Watch carefully to avoid burning.
