
Chicken Philly Sandwich
Savory grilled chicken with peppers and melted cheese

Prepare the chickenSlice chicken breasts into thin strips against the grain. Season with 1/2 teaspoon salt and 1/4 teaspoon pepper. Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Add chicken and cook until no longer pink, about 5-6 minutes. Remove chicken to a plate and set aside.

Sauté the vegetablesIn the same skillet, add the remaining tablespoon of olive oil. Add sliced bell peppers and onions. Cook, stirring occasionally, until vegetables are softened and beginning to caramelize, about 6-8 minutes. Add minced garlic and Italian seasoning during the last minute of cooking.

Combine chicken and vegetablesReturn the cooked chicken to the skillet with the vegetables. Stir to combine all ingredients and heat through for 1-2 minutes. Adjust seasoning if needed.

Prepare the breadPreheat broiler to high. Spread butter on the inside of each hoagie roll. Place rolls open-faced on a baking sheet and toast under the broiler until lightly golden, about 1-2 minutes. Watch carefully to prevent burning.

Assemble the sandwichesDivide the chicken and vegetable mixture evenly among the toasted rolls. Top each sandwich with 2 slices of provolone cheese.

Melt the cheeseReturn the sandwiches to the broiler for 1-2 minutes, until cheese is melted and bubbly. Watch carefully to prevent burning.

Serve hotRemove sandwiches from the oven. Close the sandwich tops and slice in half diagonally if desired. Serve immediately while hot and melty.
