  1. Prepare the bread
    Slice the hoagie rolls lengthwise, but don't cut all the way through. If desired, remove some of the bread from the center to create more room for fillings.
  2. Make the dressing
    In a small bowl, whisk together the olive oil, red wine vinegar, dried oregano, salt, and pepper until well combined to create a simple Italian dressing.
  3. Layer the meats and cheese
    Drizzle some of the dressing on both sides of the bread. Layer the provolone cheese first, followed by alternating layers of salami, capicola, and prosciutto. The cheese against the bread helps prevent the bread from getting soggy.
  4. Add vegetables
    Top the meats with lettuce, tomato slices, red onion, and cherry peppers. Distribute the vegetables evenly across the sandwich.
  5. Finish the sandwich
    Drizzle more dressing over the vegetables. Close the sandwich and press down gently to compact it slightly. If desired, wrap tightly in wax paper or aluminum foil and let sit for 15-30 minutes to allow flavors to meld.
  6. Serve
    Cut each hoagie in half diagonally and serve immediately. For authentic presentation, serve wrapped in deli paper with the cut side facing up.
