
Rachel Sandwich
A delicious twist on the classic Reuben with turkey and coleslaw

Prepare the Russian dressingIf making Russian dressing from scratch, mix mayonnaise, ketchup, and horseradish in a small bowl until well combined. Season with a pinch of salt and pepper to taste. Set aside.

Assemble the sandwichesLay out the rye bread slices and spread 1 tablespoon of Russian dressing on one side of each slice. Layer 4 oz of turkey on two of the bread slices, followed by 2 slices of Swiss cheese on each. Sprinkle with caraway seeds if using.

Add the coleslawDistribute the coleslaw evenly on top of the cheese. Season with salt and pepper. Top with the remaining bread slices, dressing side down, to create two complete sandwiches.

Butter the breadSpread the softened butter evenly on the outer sides of each sandwich, making sure to cover the bread completely for even browning.

Grill the sandwichesHeat a large skillet or griddle over medium heat. Once hot, place the sandwiches in the pan and cook for 3-4 minutes per side, or until the bread is golden brown and crispy, and the cheese has melted.

Serve the Rachel SandwichesRemove the sandwiches from the heat and let them rest for 1 minute. Cut each sandwich diagonally and serve immediately while hot and crispy. Pair with pickles or potato chips if desired.
