Classic New York deli sandwich with warm pastrami and mustard

Prepare the pastramiIn a large skillet or steamer, heat the pastrami slices until warm and slightly steaming, about 5-7 minutes. If using a skillet, add 2 tablespoons of water and cover to create steam.

Prepare the breadSpread butter on one side of each rye bread slice. If desired, sprinkle some caraway seeds onto the butter for extra flavor.

Heat the sauerkrautIn a small saucepan, warm the sauerkraut over medium heat for about 3-4 minutes until heated through. Drain any excess liquid.

Assemble the sandwichesSpread spicy brown mustard on the unbuttered sides of 4 bread slices. Layer each with warm pastrami (about 1/4 pound per sandwich), Swiss cheese if using, and a portion of warm sauerkraut. Top with the remaining bread slices, buttered side out.

Grill the sandwichesHeat a large skillet over medium heat and add vegetable oil. Place the sandwiches in the skillet and grill for 3-4 minutes per side until the bread is golden brown and crispy, and the cheese is melted.

ServeCut the sandwiches diagonally and serve immediately with dill pickles on the side and Russian dressing if desired. For an authentic deli experience, serve with a side of potato chips or coleslaw.
