Refreshing Korean shaved ice dessert with sweet toppings

Prepare the red bean pasteIf using canned red bean paste, simply open and set aside. If making from scratch, soak 1 cup of dried red beans overnight, then simmer them with 3/4 cup sugar until soft and most liquid has evaporated. Mash slightly and allow to cool completely.

Shave the iceUsing a shaved ice machine or blender, process ice until it has a fine, snow-like consistency. If using a blender, you may need to work in batches. Pack the shaved ice firmly into serving bowls.

Create the base layerDrizzle 1-2 tablespoons of condensed milk over each bowl of shaved ice. This will create a sweet, creamy base for your patbingsu.

Add the red bean toppingSpoon about 1/4 cup of the sweetened red bean paste on top of each bowl of shaved ice, placing it in the center.

Arrange the fruit toppingsArtfully arrange the sliced strawberries and kiwi around the red bean paste. Add the sweetened corn kernels to one section of the bowl.

Add texture elementsSprinkle the chopped nuts, mochi pieces, and colorful mochi balls or jelly pieces over the top. If using, dust with roasted soybean powder for an authentic flavor.

Finish and serveFor an extra indulgent touch, add a scoop of vanilla ice cream on top. Drizzle with remaining condensed milk. Serve immediately before the ice melts, with spoons for everyone to mix the ingredients together while eating.
