  1. Prepare the honeydew
    Cut half of the honeydew cubes into small bite-sized pieces. Place the remaining cubes in a blender and puree until smooth to create a honeydew puree. Refrigerate both the pieces and puree until well chilled, at least 30 minutes.
  2. Create the milk mixture
    In a small bowl, combine the sweetened condensed milk and regular milk. Stir well until fully incorporated. Refrigerate until ready to use.
  3. Prepare the shaved ice
    Using an ice shaver or blender, create fine, fluffy shaved ice. If using a blender, pulse ice cubes until they reach a snow-like consistency. Work in small batches to ensure the ice is finely shaved.
  4. Assemble the bingsu
    Divide the shaved ice among 4 serving bowls, creating a dome shape. Drizzle each with the milk mixture and honeydew puree. Top with honeydew pieces, mochi, and red bean paste (if using).
  5. Add the final touches
    Drizzle with honey and honeydew syrup. Sprinkle with slivered almonds and garnish with mint leaves. Serve immediately before the ice begins to melt.
