Instructions

  1. Freeze the milk
Pour the milk into ice cube trays and freeze overnight or for at least 4 hours until completely solid.
  2. Prepare the mango
Peel and dice the mangoes into small cubes. Set aside about 1/4 of the mango for topping and blend the rest into a smooth puree. Refrigerate both until ready to use.
  3. Make the shaved ice
Place the frozen milk cubes in a blender or food processor and pulse until the texture resembles fine snow. If using a shaved ice machine, follow the manufacturer's instructions. Work quickly to prevent melting.
  4. Assemble the base
Divide the shaved milk ice between four bowls, packing it gently. Drizzle each bowl with 1 tablespoon of sweetened condensed milk.
  5. Add toppings
Spoon the mango puree over the shaved ice, then add the diced mango pieces. If using, add small dollops of red bean paste and scatter mochi pieces around.
  6. Finish and garnish
Drizzle with honey or simple syrup, sprinkle with toasted coconut flakes, chopped pistachios, and sliced almonds if using. Top with a few fresh mint leaves for garnish.
