  1. Prepare the mangoes
    Peel the ripe mangoes and cut the flesh away from the pit. Dice the mango flesh and measure about 2 cups worth for the recipe.
  2. Blend the base ingredients
    In a blender, combine the yogurt, diced mango, honey or sugar, and cardamom. Blend on high speed until smooth and creamy, about 30-45 seconds.
  3. Adjust the consistency
    If the mixture is too thick, add milk a little at a time until you reach your desired consistency. Add the pinch of salt and blend again briefly to combine.
  4. Chill the lassi
    Add the ice cubes to the blender and pulse until the ice is crushed and incorporated. Alternatively, you can refrigerate the mixture for at least 30 minutes before serving over ice.
  5. Add the finishing touches
    If using saffron, gently crush the strands between your fingers and stir into the lassi mixture. This will give it a subtle flavor and beautiful color.
  6. Serve and garnish
    Pour the lassi into tall glasses. Garnish with crushed pistachios and dried rose petals if using. Serve immediately while cold.
