  1. Prepare the bananas
    Peel and roughly chop the ripe bananas. The riper the bananas, the sweeter and more flavorful your lassi will be.
  2. Blend the base ingredients
    In a blender, combine the chopped bananas, yogurt, milk, honey or sugar, and vanilla extract (if using). Blend on high speed until smooth and creamy, about 30-45 seconds.
  3. Add the spices
    Add the ground cardamom, cinnamon, and saffron strands (if using). Pulse a few times to incorporate the spices evenly throughout the mixture.
  4. Chill and blend with ice
    Add the ice cubes to the blender and pulse until the ice is crushed and the mixture is cold and frothy. If you prefer a thinner consistency, add a little more milk.
  5. Serve and garnish
    Pour the banana lassi into tall glasses. Sprinkle with chopped pistachios and a tiny pinch of cardamom or cinnamon on top for garnish. Serve immediately.
