  1. Prepare the saffron
    In a small bowl, combine the saffron threads with the warm milk. Let it steep for 5 minutes until the milk turns a golden yellow color and the saffron softens.
  2. Blend the yogurt base
    In a blender, combine the Greek yogurt, water, sugar or honey, and salt. Blend on medium speed until smooth and well combined, about 30 seconds.
  3. Add the flavorings
    Pour in the saffron-infused milk, ground cardamom, and rose water (if using). Pulse a few times to incorporate all the ingredients thoroughly.
  4. Chill and serve
    Add ice cubes to the blender and pulse briefly to chill the lassi without making it too watery. Alternatively, refrigerate the mixture for 30 minutes before serving.
  5. Garnish
    Pour the saffron lassi into tall glasses. Garnish with a sprinkle of chopped pistachios and a few additional saffron strands for an elegant presentation.
