Instructions

  1. Prepare the matcha mixture
In a small bowl, whisk the matcha powder with hot water until completely dissolved and smooth. Let it cool to room temperature, then refrigerate for at least 10 minutes.
  2. Prepare the shaved ice
Using an ice shaver or blender, process ice cubes until they reach a fine, snow-like consistency. If using a blender, you may need to work in batches for the best texture.
  3. Assemble the base
In serving bowls, place generous amounts of shaved ice. Drizzle half of the sweetened condensed milk over the ice in each bowl, allowing it to soak through the ice layers.
  4. Add the matcha flavor
Pour the cooled matcha mixture evenly over the shaved ice in each bowl. The green tea should create beautiful streaks throughout the white ice.
  5. Add toppings
Arrange the sweet red beans, mochi pieces, and sliced fruits decoratively on top of the shaved ice. Place a scoop of green tea ice cream in the center of each bowl.
  6. Finish and serve
Sprinkle with toasted almonds, drizzle with remaining condensed milk and honey or simple syrup. Serve immediately before the ice melts, with long spoons for easy eating.
