  1. Prepare the yogurt mixture
    In a medium bowl, mix the Greek yogurt with 2 tablespoons of condensed milk until smooth and creamy. Adjust sweetness to taste. Refrigerate until ready to use.
  2. Shave the ice
    Using an ice shaver or blender, process ice cubes until they reach a fine, snow-like consistency. If using a blender, work in small batches and pulse until the ice is finely shaved.
  3. Prepare the fruits
    Wash and slice the strawberries, clean the blueberries, peel and dice the kiwi, and cut the mango into small cubes. Set aside in separate small bowls.
  4. Assemble the base
    Divide the shaved ice among 4 bowls, gently pressing down to create a mound. Drizzle each with the remaining condensed milk, allowing it to seep into the ice.
  5. Add the yogurt layer
    Spoon the yogurt mixture over the shaved ice, creating a creamy middle layer. Leave some ice visible around the edges for visual appeal.
  6. Top with fruits and toppings
    Arrange the sliced fruits attractively on top of the yogurt. Drizzle with honey, then sprinkle with granola, toasted almond flakes, and mini mochi pieces if using.
  7. Serve immediately
    Bingsu melts quickly, so serve right away. Provide long spoons so diners can reach all the layers and mix the ingredients as they eat.
