
Paneer Tikka Tacos
Indian-Mexican fusion with spiced paneer and cooling raita

Marinate the paneerIn a medium bowl, combine tandoori masala paste, yogurt, lemon juice, ginger paste, garlic paste, and salt. Add paneer cubes and gently mix until evenly coated. Let marinate for at least 15 minutes, or refrigerate for up to 2 hours for deeper flavor.

Prepare the vegetablesWhile the paneer marinates, dice the bell pepper and thinly slice the red onion. Set aside about half of the red onion for serving fresh, and prepare the cucumber raita if not already made.

Cook the paneer tikkaHeat vegetable oil in a large non-stick skillet over medium-high heat. Add the marinated paneer cubes along with the marinade. Cook for 2-3 minutes, then add the bell pepper and half of the sliced onions. Continue cooking for 5-7 minutes, turning occasionally, until the paneer is golden brown and the vegetables are slightly softened.

Warm the tortillasHeat a dry skillet over medium heat. Warm each tortilla for 30 seconds on each side until soft and pliable. Keep warm by wrapping in a clean kitchen towel.

Assemble the tacosPlace a spoonful of the paneer tikka mixture onto each warmed tortilla. Top with a dollop of cucumber raita, fresh red onion slices, and a sprinkle of chopped cilantro.

Serve immediatelyArrange the tacos on a serving platter and serve while still warm. Offer extra raita and lemon wedges on the side for additional flavor.
