
Tofu Tikka Masala
Creamy, spiced plant-based curry with tender tofu cubes

Prepare the tofuAfter pressing the tofu to remove excess water, cut it into 1-inch cubes. Heat 1 tablespoon of oil in a large non-stick pan over medium-high heat. Add the tofu and cook for 8-10 minutes, turning occasionally, until golden brown on all sides. Transfer to a plate and set aside.

Create the flavor baseIn the same pan, heat the remaining tablespoon of oil over medium heat. Add the chopped onion and sauté for 5 minutes until softened. Add the minced garlic and grated ginger, cooking for another minute until fragrant.

Develop the curry sauceAdd the tikka masala paste, ground cumin, ground coriander, garam masala, and cayenne pepper to the pan. Stir constantly for 30 seconds to toast the spices. Add the diced tomatoes and tomato paste, stirring well to combine. Let simmer for 5 minutes until the sauce begins to thicken.

Blend the sauceFor a smoother texture, carefully transfer the sauce to a blender or use an immersion blender to puree until smooth. Return the sauce to the pan if using a standard blender.

Finish the curryPour in the coconut milk and stir well to combine. Add the browned tofu cubes back to the pan and simmer gently for 10 minutes, allowing the tofu to absorb the flavors. Season with salt to taste.

Serve the dishRemove from heat and let stand for 5 minutes to allow flavors to meld together. Garnish with fresh cilantro leaves before serving. Serve hot with basmati rice, naan bread, or your favorite grain.
