Creamy cottage cheese dumplings in rich tomato gravy

Prepare the kofta mixtureIn a large bowl, combine the crumbled paneer, mashed potatoes, cornstarch, chopped nuts, raisins, and salt. Mix well until the mixture holds together. If it feels too soft, add a little more cornstarch.

Form and fry the koftaShape the mixture into golf ball-sized rounds. If desired, you can stuff each ball with a small amount of chopped nuts and raisins for extra flavor. Heat oil in a deep pan and fry the koftas on medium heat until golden brown on all sides. Remove and drain on paper towels.

Prepare the gravy baseIn a separate large pan, heat 1/4 cup oil. Add chopped onions and sauté until golden brown. Add ginger-garlic paste and cook for 2 minutes until fragrant. Add turmeric, red chili powder, and 1 tablespoon of garam masala. Cook for another minute.

Create the rich gravyAdd tomato puree and cook for 5-7 minutes until oil separates. Add cashew paste and continue cooking for 3-4 minutes. Add 1 cup of water and bring to a simmer. Season with salt to taste.

Finish the gravyAdd heavy cream and the remaining garam masala. Simmer for 5 minutes on low heat until the gravy thickens and reaches a creamy consistency. Adjust salt and spices if needed.

Combine and serveGently add the fried koftas to the hot gravy just before serving, or serve them separately with the gravy poured over to prevent them from becoming soggy. Garnish with a swirl of cream and chopped coriander leaves.
