
Miso Salmon

Prepare the miso glazeIn a medium bowl, whisk together the miso paste, mirin, sake, brown sugar, soy sauce, rice vinegar, grated ginger, minced garlic, and sesame oil until smooth and well combined. Set aside 2 tablespoons of the mixture for serving.

Marinate the salmonPat the salmon fillets dry with paper towels. Place them in a shallow dish and pour the remaining miso mixture over them, turning to coat evenly. Cover and refrigerate for at least 30 minutes, or up to 2 hours for more flavor.

Preheat and preparePreheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or aluminum foil. Remove the salmon from the marinade, gently wiping off excess marinade (but leaving a thin coating).

Bake the salmonPlace the salmon fillets skin-side down on the prepared baking sheet. Bake in the preheated oven for 10-12 minutes, or until the salmon is just cooked through and flakes easily with a fork. For a caramelized finish, broil for the last 1-2 minutes, watching carefully to prevent burning.

ServeTransfer the salmon to serving plates. Drizzle with the reserved miso mixture, then sprinkle with sliced green onions and toasted sesame seeds. Serve immediately with steamed rice and vegetables for a complete meal.
