  1. Prepare the marinade
    In a small bowl, whisk together olive oil, lemon juice, minced garlic, half of the herbs (dill, parsley, and thyme), lemon zest, honey, salt, pepper, and red pepper flakes if using.
  2. Marinate the salmon
    Place salmon fillets in a shallow dish, skin side down. Pour the marinade over the salmon, ensuring it's evenly coated. Cover and refrigerate for 15-30 minutes (no longer than 30 minutes as the acid in the lemon will begin to 'cook' the fish).
  3. Preheat the grill
    Preheat your grill to medium-high heat (about 375°F to 400°F). Clean and oil the grates to prevent sticking. If using a grill pan, heat over medium-high heat.
  4. Grill the salmon
    Remove salmon from the marinade, letting excess drip off. Place salmon on the grill, skin side down. Close the grill lid and cook for 6-8 minutes without moving it. The skin will help protect the delicate flesh from the heat.
  5. Flip and finish cooking
    Carefully flip the salmon using a wide spatula. Cook for another 2-4 minutes until the salmon is opaque and flakes easily with a fork. The internal temperature should reach 145°F for food safety.
  6. Rest and garnish
    Transfer the salmon to a serving platter and let rest for 2-3 minutes. Sprinkle with the remaining fresh herbs and garnish with lemon slices.
