  1. Prepare the glaze
    In a small bowl, whisk together maple syrup, Dijon mustard, whole grain mustard, minced garlic, soy sauce, olive oil, lemon zest, lemon juice, thyme, salt, and pepper until well combined.
  2. Prepare the salmon
    Pat the salmon fillets dry with paper towels. Place them skin-side down on a parchment-lined baking sheet. Season lightly with additional salt and pepper if desired.
  3. Apply the glaze
    Generously brush the maple-Dijon mixture over the tops and sides of the salmon fillets, reserving about 2 tablespoons of the glaze for basting during cooking.
  4. Marinate briefly
    Let the salmon sit at room temperature for 10 minutes to allow the flavors to penetrate slightly. Meanwhile, preheat your oven to 400°F (200°C).
  5. Bake the salmon
    Place the baking sheet with salmon in the preheated oven. Bake for 10-12 minutes, until the salmon is almost cooked through but still slightly translucent in the center.
  6. Broil for caramelization
    Switch the oven to broil. Brush the remaining glaze over the salmon and broil for 2-3 minutes, until the top is caramelized and slightly crispy, watching carefully to prevent burning.
  7. Rest and serve
    Remove salmon from the oven and let it rest for 2-3 minutes. The residual heat will finish cooking the salmon. Serve immediately with your choice of sides, garnished with fresh herbs or lemon wedges if desired.
