  1. Prepare the Brussels sprouts
    Preheat oven to 400°F (200°C). Trim the ends off the Brussels sprouts and remove any yellow or damaged outer leaves. Cut the sprouts in half lengthwise. Place them in a large bowl.
  2. Create the maple glaze
    In a small bowl, whisk together the olive oil, maple syrup, balsamic vinegar, and minced garlic until well combined. Pour this mixture over the Brussels sprouts and toss until all sprouts are evenly coated.
  3. Season and arrange
    Add the salt, black pepper, and red pepper flakes (if using) to the Brussels sprouts and toss again. Spread the sprouts in a single layer on a large baking sheet, cut sides down for maximum caramelization. If using bacon, scatter the chopped pieces among the sprouts.
  4. Roast the Brussels sprouts
    Place the baking sheet in the preheated oven and roast for 15 minutes. Remove from oven, stir the sprouts, and sprinkle the chopped pecans over them. Return to the oven and roast for an additional 10 minutes, or until the sprouts are tender and caramelized with crispy edges.
  5. Finish and serve
    Remove from the oven and transfer to a serving dish. Sprinkle with fresh thyme leaves. The Brussels sprouts can be served hot or at room temperature. They pair wonderfully with roasted meats or as part of a vegetarian meal.
