
Balsamic Glazed Salmon
Tender salmon fillets with a sweet and tangy balsamic reduction

Prepare the salmonPat the salmon fillets dry with paper towels. Season both sides with salt and pepper. Allow the salmon to come to room temperature for about 15 minutes before cooking.

Make the balsamic glazeIn a small saucepan over medium heat, combine balsamic vinegar, honey or maple syrup, minced garlic, and Dijon mustard. Bring to a gentle simmer and cook for 8-10 minutes, stirring occasionally, until the mixture reduces by half and becomes syrupy. Remove from heat and stir in 1 tablespoon of olive oil, lemon zest, and lemon juice.

Cook the salmonHeat the remaining tablespoon of olive oil in a large non-stick or cast-iron skillet over medium-high heat. Once hot, place the salmon fillets skin-side down in the pan. Cook for 3-4 minutes until the skin is crispy. Flip the salmon and cook for another 2-3 minutes for medium doneness, or until the salmon reaches your desired level of doneness.

Glaze the salmonReduce the heat to low. Add the butter to the balsamic glaze if using, and stir until melted. Pour about two-thirds of the glaze over the salmon in the pan, reserving some for serving. Gently tilt the pan to distribute the glaze and spoon it over the fillets. Cook for another minute to let the glaze caramelize slightly.

Rest and serveTransfer the salmon to serving plates. Drizzle with the remaining balsamic glaze, sprinkle with fresh thyme leaves, and serve immediately. The salmon pairs well with roasted vegetables, steamed asparagus, or a light salad.
