
Lemon Dill Salmon
Tender salmon fillets with bright citrus and fresh herbs

Prepare the salmonPat the salmon fillets dry with paper towels. Season both sides with salt and pepper. Let sit at room temperature for 10 minutes before cooking.

Make the lemon-dill sauceIn a small bowl, whisk together the olive oil, lemon juice, 2 tablespoons of dill, minced garlic, Dijon mustard, honey, and lemon zest until well combined. Set aside.

Preheat the ovenPreheat your oven to 375°F (190°C). Line a baking sheet with parchment paper or aluminum foil for easier cleanup.

Prepare the baking dishArrange the sliced shallots and half of the lemon slices on the bottom of the baking sheet. If using, pour the white wine over them. This creates a flavorful bed for the salmon.

Cook the salmonPlace the salmon fillets skin-side down on top of the bed of shallots and lemon. Spoon the lemon-dill sauce evenly over each fillet. Top with remaining lemon slices. Bake for 15-20 minutes, or until the salmon flakes easily with a fork but is still moist in the center.

Rest and garnishRemove from the oven and let rest for 5 minutes. Garnish with the remaining fresh dill before serving.
