  1. Prepare the salmon
    Preheat the oven to 375°F (190°C). Pat the salmon fillets dry with paper towels and place them skin-side down on a parchment-lined baking sheet. Season with salt and pepper.
  2. Make the pesto topping
    In a small bowl, combine the pesto, minced garlic, lemon juice, and 1 tablespoon of olive oil. Mix well until all ingredients are incorporated.
  3. Top the salmon
    Spread the pesto mixture evenly over each salmon fillet, making sure to cover the entire top surface. Sprinkle with grated Parmesan cheese and half of the toasted pine nuts.
  4. Bake the salmon
    Drizzle the remaining olive oil around the salmon fillets and bake in the preheated oven for 15-20 minutes, or until the salmon is cooked through and flakes easily with a fork. The internal temperature should reach 145°F (63°C).
  5. Garnish and serve
    Remove the salmon from the oven and let it rest for 2-3 minutes. Garnish with lemon slices, remaining pine nuts, and fresh chopped dill. Serve immediately with your favorite side dishes.
