Prepare the dipping sauceIn a small saucepan, combine dashi stock, soy sauce, mirin, and sugar. Bring to a simmer over medium heat, stirring until sugar dissolves completely. Remove from heat and let cool completely. Once cooled, transfer to a serving container or individual dipping bowls and refrigerate until serving time.

Cook the soba noodlesBring a large pot of water to a boil. Do not add salt. Add the soba noodles and stir gently to prevent sticking. Cook according to package instructions, usually 4-5 minutes or until al dente. Do not overcook as noodles will become mushy.

Rinse and cool the noodlesOnce cooked, drain the noodles in a colander and immediately rinse under cold running water. Use your hands to gently massage the noodles while rinsing to remove excess starch and cool them completely. This step is crucial for achieving the proper texture.

Ice bath the noodlesTransfer the rinsed noodles to a bowl filled with ice water and let them chill for 1-2 minutes. This will give the soba noodles a refreshing, firm texture. Drain thoroughly and gently pat dry with a clean kitchen towel if necessary.

Arrange the noodlesDivide the chilled soba noodles among four serving plates or on a traditional zaru (bamboo mat). For authentic presentation, arrange them in neat, rounded portions. If using a zaru, place a sheet of nori beneath the noodles.

Prepare the garnishesArrange small piles of chopped green onions, grated daikon, wasabi, and nori strips on a separate plate. Each diner can add these garnishes to their dipping sauce according to taste.
