Prepare the grillPreheat your grill to medium-high heat (around 375-400°F/190-205°C). Clean the grates thoroughly to prevent sticking.

Make honey butter mixtureIn a small bowl, combine the softened butter, honey, lime juice, salt, and optional cinnamon and cayenne pepper. Mix until smooth and well combined. Set aside at room temperature.

Prepare the cornBrush each ear of corn lightly with vegetable oil to prevent sticking. This also helps achieve those beautiful grill marks.

Grill the cornPlace corn directly on the grill grates. Close the lid and grill for 10-15 minutes, turning every 2-3 minutes until kernels are tender and charred in spots. The corn should have a nice golden color with some darker char marks.

Apply honey butterRemove corn from grill and immediately brush generously with the honey butter mixture, allowing it to melt into all the crevices between kernels. Turn the corn as you brush to ensure even coverage.

Garnish and serveSprinkle the grilled corn with chopped chives and optional Parmesan cheese. Serve immediately while hot, with any remaining honey butter on the side for additional dipping.
