Prepare the marinadeIn a medium bowl, whisk together honey, soy sauce, olive oil, minced garlic, Dijon mustard, lemon juice, paprika, black pepper, salt, and cayenne pepper (if using) until well combined.

Marinate the chickenPlace chicken breasts in a large resealable plastic bag and pour in three-quarters of the marinade, reserving the rest for basting during grilling. Seal the bag, removing as much air as possible, and massage the marinade into the chicken. Refrigerate for at least 2 hours, preferably overnight.

Preheat the grillPreheat grill to medium-high heat (about 375-400°F). Clean and oil the grill grates to prevent sticking.

Grill the chickenRemove chicken from the marinade and discard the used marinade. Place chicken on the preheated grill and cook for 5-7 minutes per side, or until the internal temperature reaches 165°F. Baste with the reserved marinade during the last few minutes of cooking.

Rest and serveTransfer the grilled chicken to a clean plate and let it rest for 5 minutes before serving to allow juices to redistribute. Garnish with fresh chopped parsley before serving.
