Sweet figs and tangy blue cheese on crispy artisanal bread

Toast the breadBrush each slice of sourdough bread with olive oil on both sides. Toast in a preheated oven at 400°F (200°C) for 4-5 minutes until golden and crisp around the edges, or grill on a hot griddle pan for 1-2 minutes per side.

Prepare the figsWhile the bread is toasting, slice the figs into quarters or sixths, depending on their size. Gently toss them with 1 tablespoon of honey in a small bowl to lightly coat them.

Assemble the tartinesPlace the toasted bread slices on a serving platter. Crumble the blue cheese evenly over each slice, pressing it slightly into the warm bread so it begins to melt. Arrange the honeyed fig slices decoratively on top of the cheese.

Add the toppingsSprinkle the toasted walnuts over the tartines. Drizzle each tartine with additional honey and the balsamic reduction. The balsamic should be applied in a thin zigzag pattern for an elegant presentation.

Final touchesScatter fresh thyme leaves over each tartine. Sprinkle with a small pinch of flaky sea salt and a few grinds of black pepper. If using, add a small handful of microgreens or arugula on top for color and a peppery flavor contrast.

Serve immediatelyFor the best texture and flavor, serve the tartines immediately while the bread is still warm and crispy, and the cheese is slightly melted. Cut larger slices in half diagonally if desired for easier handling.
