
Watermelon and Feta Salad
A refreshing summer salad with sweet watermelon and tangy feta

Prepare the watermelonCut the watermelon into 1-inch cubes, removing any seeds if necessary. Place in a large serving bowl and chill while preparing the other ingredients.

Make the dressingIn a small bowl, whisk together the olive oil, lime juice, honey, salt, and pepper until well combined. Taste and adjust seasoning if needed.

Combine the ingredientsAdd the crumbled feta, chopped mint leaves, and thinly sliced red onion to the bowl with the watermelon. If using, add the Kalamata olives as well.

Toss and serveDrizzle the dressing over the salad and gently toss to combine, being careful not to break up the watermelon or feta too much. Serve immediately, or chill for up to 30 minutes before serving. If using, drizzle with balsamic glaze just before serving.
