  1. Prepare the chickpeas
    Drain and rinse the chickpeas thoroughly under cold water. For an extra smooth hummus, you can remove the skins by gently rubbing the chickpeas between your hands and discarding the loose skins.
  2. Blend the base ingredients
    In a food processor, combine the chickpeas, tahini, 2 tablespoons of olive oil, lemon juice, garlic, cumin, and salt. Process until the mixture begins to form a paste, about 30 seconds.
  3. Adjust the consistency
    With the food processor running, slowly add cold water one tablespoon at a time until the hummus reaches your desired consistency. For a smoother hummus, add more water; for a thicker hummus, add less. Process for 1-2 minutes until very smooth and creamy.
  4. Taste and adjust seasonings
    Stop the food processor and taste the hummus. Adjust the seasonings as needed, adding more salt, lemon juice, or cumin to taste. Process again briefly to incorporate any additions.
  5. Serve and garnish
    Transfer the hummus to a serving bowl. Using the back of a spoon, create a shallow well in the center. Drizzle with the remaining tablespoon of olive oil, sprinkle with paprika, and garnish with fresh chopped parsley. Serve at room temperature with pita bread, vegetable crudités, or crackers.
