
Buffalo Chicken Nachos
Spicy, cheesy nachos loaded with buffalo chicken and toppings

Prepare the buffalo chickenIn a medium bowl, toss the shredded chicken with the buffalo hot sauce until thoroughly coated. For a milder flavor, use less hot sauce. For extra heat, add more sauce or mix in a dash of cayenne pepper.

Arrange the chipsPreheat oven to 375°F (190°C). Spread the tortilla chips in an even layer on a large baking sheet or in a cast-iron skillet. Make sure the chips overlap slightly for maximum coverage.

Add the first layer of toppingsDistribute the buffalo chicken evenly over the chips. Sprinkle 2 cups of the shredded cheese blend over the chicken. Add half of the blue cheese crumbles, half of the diced red onion, and half of the jalapeños.

Bake the nachosPlace the loaded nachos in the preheated oven and bake for 10-12 minutes, or until the cheese is completely melted and starting to bubble around the edges. The edges of some chips should begin to turn golden brown.

Add remaining toppingsRemove the nachos from the oven and immediately sprinkle with the remaining cheese and blue cheese crumbles. The residual heat will help melt these cheeses. Top with diced tomatoes, remaining red onion, remaining jalapeños, and black olives.

Garnish and serveFinish by topping with chopped cilantro and dollops of sour cream. Add diced avocado or guacamole. Serve immediately while hot and cheese is still melted. For easy serving, provide small plates for guests.
